New season new barge

For summer 2017 I will cruising on the L’impressioniste barge in the Ouche valley in Burgundy, one of the classic barge routes through very picturesque Burgundian villages.

A couple of dishes from our first weeks cruising, a new dish of miso & caramelised white chocolate mousse costed in a tempered white chocolate coating, served with a Granny Smith apple sorbet & purée, this is the first airing of this dish & will no doubt under go development during the season.

Also an old favourite that has had a couple of tweaks, saddle of rabbit wrapped in local Morgan ham, faggot of braised leg meat &a marjoram, kidney, spinach, wild mushrooms, Dijon mustard sauce.

The first week the guests went on a cycling tour with our matelot Sam, we went to meet them in the countryside & set up a much needed picnic for them after cycling through the hillsides along the edge of the burgundy canal.
